So, I have to find ways to stay in shape for the summer that don't involve the exercise I need and I've grown to love.
One solution: my diet. I'm so much more concious than I used to be about what I eat, especially when I'm not biking. I've even got a reputation at work for the most frugal, healthy, ridiculously pared-down meals. This has become one of my winter fave meals at work:
French Orange Salad
I take about five oranges and French them. That's where you go through and remove all the connective tissues and fibers, and cut out all the individual segments of orange. It's a delightfully decadent and delicious citrus preparation. Then I top it with tons of fresh basil, and nuts candied with lots of fennel and cinnamon. So good. It's like a mouthful of Sicilian sunshine.
